Who We Are


Adam's menu draws on influences of traditional recipes and indigenous ingredients, in his own interpretation.


Growing up in Nutley, NJ, Adam Rose and VJ Moscaritola have been friends since back in the day. Exploring neighborhoods in NJ and NY led to traveling to California, Salt Lake City, Chicago, Philly, and Portland. They ultimately found themselves in la patria — trekking across Mexico to places like Oaxaca and Mexico City. With a mutual respect and love for classic Mexican food, they've partnered to make Villalobos a reality.





Adam - chef & owner: 

His previous gigs include helping to open acclaimed dining destinations Restaurant Passione (Montclair) and Bin 14 Trattoria & Wine Bar (Hoboken) — the latter where he earned an "excellent" review from the New York Times. Before launching Villalobos, he held the position of Executive Chef of New Jersey Performing Arts Center since October 2011.


VJ - business services: 

Owner/creative director of Gumdrop Hairdressing, located on downtown Montclair's Church Street.
